The bakery El Rosal was founded back in 1920. It was in operation until 2003, when the business was at the point of being closed down due as no one in the family wanted to take it over. It was at this point that Associació Alba took it over with a more social purpose: some of its workers are people with disabilities or at risk of social exclusion. The bakery's star product is a type of cookie known as "arrugats", which they produce individually and by hand.
Núria Cendoya is manager of the bakery and considers that what lies behind these cookies is "many stories of overcoming adversity, difficult lives, and that is what gives sense to it for us." But quality is not disregarded, as these cookies are considered a gourmet product: "We miss very few cookies that are in bad condition, we're very demanding. The product must be impeccable," says Nuria.
The bakery also works with local products such as flour and butter, as it is an extremely artisanal production process. "The price is high and production is limited," says Nuria.
