As well as being a traditional cereal from the Andes with many healthy properties, amaranth is the main ingredient that sustains the social enterprise Amaranthia.
Its creator, Felipe Hernández Galicia, found out about its history during his time at university, when in a symposium he discovered the history of the cereal and was struck by its importance. For the pre-Columbian peoples it was an ornamental, nutritional and magical element that they used for religious ceremonies.
In 1990 he borrowed some land from his grandfather to begin to carry out his first agricultural experiments. At the end of the 1990s he was already producing on 20 hectares a sufficient amount for consumers to become interested in the product.
The production became completely organic and he now employs a team of 17 people dedicated to the production, processing and sale of organic products prepared with amaranth and other seeds.
